Agung Prabawo is the co-founder of Penicillin, a sustainable bar in Hong Kong. In a city that imports 90% of its food, he uses mostly local produce that could be re-used, fermented or evaporated into new ingredients.

He and his team are also champions of closed-loop production, ingredient upcycling, and eco-friendly design including bar tables made from local trees downed by Typhoon Mangkhut.
